In the narrow streets around the cathedrals of most old cities one gets a sense of how the community developed over the centuries. Small businesses offering food and shelter to the never-ending throng of pilgrims were established literally in the shadow of the towering church spires and now (in this case, in Canterbury) they are still there although the fare they offer (and the prices they charge) will have changed over time.
